Avocado Toast (Two Ways!)

Ingredients for Sliced Avocado Toast
- 1 avocado, peeled and pitted
- ½ – 1 tsp everything bagel spice (find at Trader Joe’s or make your own)
- 2 slices, whole grain bread (can substitute bread of choice)
- 2 eggs, fried (can substitute scrambled, poached, etc.)
Instructions for Sliced Avocado Toast
- Prep your ingredients. Slice avocado to desired thickness and set aside. Measure out your seasoning and place to the side.
- Place two slices of bread to toast until golden brown and crispy.
- While bread is toasting, prepare eggs in preferred method. If frying, place a small amount of olive oil in a pan over medium heat and cook each side until browned.
- Assembly: Place your slices of avocado on your toast and place eggs on top. Season and enjoy!
Ingredients for Mashed Avocado Toast
- 1 avocado, peeled and pitted
- ½ lime, juiced (optional)
- ½ cup, sprouts
- 3-5 cherry tomatoes, halved
- Salt and Pepper, to taste
Instructions for Mashed Avocado Toast
- Prep your ingredients. Scoop avocado and mash to desired consistency. Add lime juice, salt, and pepper. Halve your cherry tomatoes and wash/cut your sprouts.
- Place two slices of bread to toast until golden brown and crispy.
- Assembly: Place mashed avocado, tomatoes, and sprouts on top of toast. Add salt and pepper, if desired, and enjoy!
